½ cup oatmeal
1 cup soy milk
1 handful cashews
6-8 frozen/fresh cherries, halved and pitted
a few sprinkles of cinnamon
1 tsp maple syrup
1/2 vanilla extract
1 tbsp cocoa powder
- Bring 1 cup liquid (I use Silk Almond Milk) to a boil, add 1/2 cup regular rolled oats, and reduce heat to medium.
- Mix in fresh cherries and continue to stir.
- Once more of the liquid has dissolved, add 1/2 tsp vanilla extract, cinnamon, cocoa powder and maple syrup.
- When you're pleased with the consistency of the oatmeal, transfer to a bowl. Top with cashews, and another cherry if you like. Serve hot!
