1/2 cup rolled oats1 cup coconut milk (I used Coconut Dream)1/4 cup frozen/fresh raspberries1/8 tsp cinnamon1/8 tsp vanilla extract1 sachet stevia2 tbsp unsweetened coconut flakes, lightly toasted
- Place oats, and milk into a small pot, warm over medium heat until it begins to simmer.
- Simmer for 4 minutes, stirring occasionally. Turn heat down to low and stir in cinnamon, vanilla, stevia and half of the raspberries.
- Once desired consistency is achieved, transfer to a bowl and top with a couple of raspberries, and toasted coconut flakes. Enjoy while hot!
