{O30} Day 17: Coconut Raspberry Oatmeal

 

1/2 cup rolled oats
1 cup coconut milk (I used Coconut Dream)
1/4 cup frozen/fresh raspberries
1/8 tsp cinnamon
1/8 tsp vanilla extract
1 sachet stevia
2 tbsp unsweetened coconut flakes, lightly toasted

  1. Place oats, and milk into a small pot, warm over medium heat until it begins to simmer.

  2. Simmer for 4 minutes, stirring occasionally. Turn heat down to low and stir in cinnamon, vanilla, stevia and half of the raspberries.

  3. Once desired consistency is achieved, transfer to a bowl and top with a couple of raspberries, and toasted coconut flakes. Enjoy while hot!
