Oatmeal 30 Project - Final Week

Aaaaaand I'm finally done! I can't believe I've just successfully finished a project! I feel so accomplished right now! ;) Even though I love oatmeal so much, I've never thought I would actually eat it for breakfast for 30 straight days. I mean, I also love pancakes for breakfast you know so, yeah it was really amazing. Now, I can finally tick this task in my 365 bucketlist. Hehe.

Anyways,  here are the list of the ideas for my last week. You know what to do if you want the recipe!



Day 22 - Pina Colada Oatmeal
Day 23 - Peach Mango Pie Oatmeal
Day 24 - Cherry Vanilla Oatmeal
Day 25 - Grapefruit Oatmeal
Day 26 - Zucchini Bread Oatmeal
Day 27 - Pumpkin Pie Oatmeal
Day 28 - Pistachio Pudding Pie Oatmeal

So there you have it ;) For this last week, I really tried some peculiar ideas for me like zucchini, and pumpkin, and grapefruit? Oh and pineapple! I was quite unsure of how it would taste at first but as it always does, it turned out great. This whole project thing taught me how to experiment and get out of my comfort zone (putting my usual oatmeal toppings) and despite the fact that I was somehow uneasy during preparation time, I was also excited on the outcome.

I really had fun doing this. Even though most of the time, my oatmeal is not hot anymore because I've spent almost 10 minutes trying to take a nice photo of it. Hehe.  Now I could say that everything you could possibly think of putting in your oatmeal would always taste good, ;)

{O30} Day 30: Mocha-nut Oatmeal

1/2 cup brewed coffee (or your choice)
1/2 cup milk
1/2 cup rolled oats
1 tbsp cocoa powder (I used Ghirardelli Dark Chocolate unsweetened cocoa)
1/4 tsp pure vanilla extract
1-2 tbsp almonds, chopped (optional, or use other nuts) 
1/2 medium banana, mashed
1 tbsp peanut butter (or any nut butter)
Milk, to taste (optional)

1. Place brewed coffee, milk, in a medium-sized saucepan. Bring to a boil over medium-high heat, stirring frequently.

2. Mix in mashed banana, vanilla extract, cinnamon, and cocoa powder. Stir until incorporated.

3. Simmer over medium heat until desired consistency.

4. Once ready, transfer into bowl and add peanut butter and almonds. Pour some more milk if you like. Serve hot! ;)

{O30} Day 29: Key Lime Pie Oatmeal

1/2 cup  rolled oats
1/2 cup milk (I use Silk Almond Milk)
1/2 medium banana, mashed
1/4 tsp vanilla extract
1 sachet stevia
2 tbsp fat-free greek yogurt (I use Fage 0%)
2 tbsp lime juice, fresh
pinch of lime zest
handful of pecans, crushed and toasted
lime wedge, as garnish

1. In a medium size pan, heat the oats, and milk over medium heat. Once the mixture begins to simmer, stir in the mashed banana. Continue to stir until incorporated.

2. In a separate medium-size bowl, add the greek yogurt, 1 tablespoon lime juice, lime zest, 1/2 sachet of stevia, and 1/4 tsp vanilla and whisk together. Set aside.

3. Add in the oatmeal mixture the vanilla, remaining tbsp of lime juice, and stevia, and stir until incorporated. Transfer into bowl and top with the yogurt mixture and crushed pecans.

{O30} Day 28: Pistachio Pudding Pie Oatmeal

 

1/2 cup rolled oats
1 cup milk (I use Silk Almond Milk)
1 tbsp Jello pistachio pudding mix
1/8 tsp vanilla extract
dried cranberries
chopped almonds

1. Place milk and oats in a medium-sized saucepan. Bring to a boil over medium-high heat, stirring frequently.

2. Add in pudding mix and vanilla extract.Stir until incorporated.

3. Once the oats reached the desired consistency. Remove from saucepan and transfer to a bowl.


4. Top with almonds and dried cranberries. Serve hot!

{O30} Day 27: Pumpkin Pie Oatmeal

1/2 cup rolled oats
1cup soy milk, plain or vanilla
1/8tsp vanilla extract 
2 Tsp maple syrup,
1/4 tsp cinnamon
1/3 cup canned pumpkin pie mix (I didn't have plain pumpkin)
1/3 cup pecans
few pumpkin seeds, for topping
1. Place  milk, and oats in a medium-sized saucepan.

2. Bring to a boil over medium-high heat, stirring frequently.

3. Add in vanilla extract, canned pumpkin pie mix, maple syrup, and cinnamon. Simmer over medium heat  until desired consistency.

4. Transfer into a bowl then add pecans and pumpkin seeds. Serve hot ;).

    {O30} Day 26: Zucchini Bread Oatmeal

    1/2 cup rolled oats
    1 cup non-dairy milk or water (I use Silk Almond Milk)
    1/8 tsp ground cinnamon
    Pinch of nutmeg, to taste
    1/2 cup packed finely grated zucchini
    2 tbsp chopped pecans
    1 tsp vanilla extract
    1 sachet stevia
     
    1. In a medium sized pot, mix milk, cinnamon, nutmeg, and oats. Bring to a boil and simmer over medium heat, stirring frequently,approximately 5 minutes.

    2. Now stir in half of the grated zucchini,  and vanilla extract. Cook over medium heat for another 5-6 minutes. Reduce heat to low if required.

    3. When you're pleased with the consistency, transfer into a bowl and top with the rest of zucchini, and pecans. Serve hot ;)

    {O30} Day 25: Grapefruit Oatmeal

    1 cup rolled oats
    1/2 cup soy milk (I used Silk)
    2 tbsp greek yogurt (I used Fage 0%)
    1/8 tsp cinnamon
    1/8 tsp vanilla extract
    1 sachet stevia
    1/2 ruby red grapefruit
    handful chopped almonds
    1. Bring 1 cup milk to a boil, add 1/2 cup regular rolled oats, and reduce heat to medium.

    2. Once the liquid has dissolved, add half of the grapefruit, greek yogurt, 1 sachet stevia, 1/8 tsp vanilla extract, and 1/8 tsp cinnamon. Stir.

    3. When you're pleased with the consistency of the oatmeal, transfer to a bowl.

    4. Top with the remaining grapefruit, and chopped almonds Serve hot! ;)

    {O30} Day 24: Cherry Vanilla Oatmeal

    1 cup rolled oats
    1/2 cup soy milk (I used Silk)
    2 tbsp greek yogurt (I used Fage 0%)
    1/8 tsp cinnamon
    1/8 tsp vanilla extract
    1 sachet stevia
    6 cherries, halved and pitted
    handful chopped cashews
    1 tbsp toasted coconut flakes
    1. Bring 1 cup milk to a boil, add 1/2 cup regular rolled oats, and reduce heat to medium.
    2. Once the liquid has dissolved, add the cherries, greek yogurt, 1 sachet stevia, 1/8 tsp vanilla extract, and 1/8 tsp cinnamon. Stir.
    3. When you're pleased with the consistency of the oatmeal, transfer to a bowl.
    4. Top with cashews, coconut flakes and that one cherry over there. Serve hot! ;)

    {O30} Day 23: Peach Mango Pie Oatmeal

     

    1 cup rolled oats
    1/2 cup soy milk (I used Silk)
    2 tbsp greek yogurt (I used Fage 0%)
    1/8 tsp cinnamon
    1/8 tsp vanilla extract
    1 sachet stevia
    1 small peach, sliced
    1 medium sized mango, peeled and sliced
    slivered almonds
    1. Bring 1 cup milk to a boil, add 1/2 cup regular rolled oats, and reduce heat to medium.

    2. Once the liquid has dissolved, add half of the peaches and mango slices, 1 sachet stevia, 1/8 tsp vanilla extract, and 1/8 tsp cinnamon. Stir.

    3. When you're pleased with the consistency of the oatmeal, transfer to a bowl.

    4. Top with the remaining mangoes and peaches, and almonds. Serve hot! ;)
    Side note: this recipe is inspired by my favorite dessert pie in Jollibee (one of the leading fastfood chain in the Philippines). Oh how I miss home :")

    Oatmeal 30 Project - Week 3

    This week, had been a pretty rough week to keep this little project of mine. Its because there had been days when I have to wake up extra early to go somewhere (i.e attend BLS training in the hospital, and go to Hersheypark with my cousins). That means I had less time to prepare oatmeal. I usually take my time in making oatmeal and make sure I would be able to watch Live with Kelly! while eating them so yeah. But, I succeeded this week and I'm so happy about it. ;)


    Like what I said last week, my oatmeal ideas this week would be more varied, and I would try toppings I have never thought of trying and yes, I was able to accomplish that goal. For example, I never used coconut milk or coconut flakes in my oatmeal (I always use almond or soy milk) but now I'm totally addicted to it! I would also never consider mixing chocolate with coconuts but again, I was blown away.

    {O30} Day 22: Pina Colada Oatmeal

    1/2 cup rolled oats
    1 cup coconut milk (I used Coconut Dream)
    1 ripe banana
    1/8 tsp cinnamon
    1/8 tsp vanilla extract
    1/3 cup pineapple chunks
    2 tbsp unsweetened coconut flakes, toasted

    1. In a small sauce pan, bring the oats and milk to a boil.  
    2. Once they have started to boil, mash in your ripened banana. Stir until incorporated.
    3. Add in vanilla extract, cinnamon, half of the pineapple chunks to the mixture and stir more.
    4. When the oats have reached your desired consistency, transfer to a bowl and top with the rest of the pineapple chunks and toasted coconut flakes. Serve hot! ;)
