{O30} Day 30: Mocha-nut Oatmeal

1/2 cup brewed coffee (or your choice)
1/2 cup milk
1/2 cup rolled oats
1 tbsp cocoa powder (I used Ghirardelli Dark Chocolate unsweetened cocoa)
1/4 tsp pure vanilla extract
1-2 tbsp almonds, chopped (optional, or use other nuts) 
1/2 medium banana, mashed
1 tbsp peanut butter (or any nut butter)
Milk, to taste (optional)

1. Place brewed coffee, milk, in a medium-sized saucepan. Bring to a boil over medium-high heat, stirring frequently.

2. Mix in mashed banana, vanilla extract, cinnamon, and cocoa powder. Stir until incorporated.

3. Simmer over medium heat until desired consistency.

4. Once ready, transfer into bowl and add peanut butter and almonds. Pour some more milk if you like. Serve hot! ;)

{O30} Day 15: Banana Split Oatmeal

 

1/2cup rolled oats
1 cup milk (Silk Almond Milk)
1/3 cup strawberries, chopped
1 banana, peeled, 1/2cubed, 1/2mashed
1tb cocoa powder
1/8 tsp vanilla extract
a few sprinkles of cinnamon
maple syrup

1. Heat oats and almond milk in a medium sized saucepan for approximately 5 minutes.
2. Mix in cinnamon and maple syrup.
3. Stir well, then add mashed banana and cocoa powder.
4. When oats have reach desired consistency, remove from heat then top with bananas and strawberries. Serve hot! ;)

{O30} Day 8: Dark Chocolate Cottage Cheese Oatmeal

1/2 cup rolled oats
 1 cup almond milk (I used Silk Almond Milk)
1/4 cup low sodium cottage cheese
1 Tablespoon cocoa powder (Ghirardelli Unsweetedned Dark Chocolate Powder)
1 Tablespoon Better N' Peanut Butter

1. In a small pot, heat the oats, almond milk, and water until they come to a boil.
2. Lower heat and allow to simmer.  Add cottage cheese and stir well.
3. When oats have reach desired consistency, remove from heat and stir in cocoa powder.
4. Put oats into a bowl and immediately with peanut butter.

{O30} Day 7: Chocolate Cherry Oatmeal


 

½ cup oatmeal
1 cup soy milk
1 handful cashews
6-8 frozen/fresh cherries, halved and pitted
a few sprinkles of cinnamon
1 tsp maple syrup
1/2 vanilla extract
1 tbsp cocoa powder

  1. Bring 1 cup liquid (I use Silk Almond Milk) to a boil, add 1/2 cup regular rolled oats, and reduce heat to medium.
  2. Mix in fresh cherries and continue to stir.
  3. Once more of the liquid has dissolved, add 1/2 tsp vanilla extract, cinnamon, cocoa powder and maple syrup.
  4. When you're pleased with the consistency of the oatmeal, transfer to a bowl. Top with cashews, and another cherry if you like. Serve hot!

{O30} Day 5: Peanut Butter Cup Oatmeal

1/2 cup (40g) rolled oats
1 cup milk
1/2 tsp vanilla extract
1tbsp unsweetened cocoa powder (Ghirardelli Dark Chocolate)
1/8 tsp cinnamon
Maple syrup to drizzle
1 tbsp Almond butter
 
1. In a medium size pan, heat the oats, and milk over medium heat.
2. Once the mixture begins to simmer, approximately 5-6 minutes, stir in the sliced banana.
3. Continue to stir until the banana breaks down and the mixture thickens. Add the vanilla,
cinnamon, cocoa powder, and stevia, and stir until incorporated.
4. Transfer to a bowl and top with almond butter (I used Trader Joe's raw crunchy Almond butter). Serve hot!
