adapted from: Une-deux senses
1/2 cup rolled oats
1 cup non-dairy milk or water (I use Silk Almond Milk)
1/8 tsp ground cinnamon
Pinch of nutmeg, to taste
1/2 cup packed finely grated zucchini
2 tbsp chopped pecans
1 tsp vanilla extract1 sachet stevia1. In a medium sized pot, mix milk, cinnamon, nutmeg, and oats. Bring to a boil and simmer over medium heat, stirring frequently,approximately 5 minutes.
2. Now stir in half of the grated zucchini, and vanilla extract. Cook over medium heat for another 5-6 minutes. Reduce heat to low if required.
3. When you're pleased with the consistency, transfer into a bowl and top with the rest of zucchini, and pecans. Serve hot ;)
