{O30} Day 11: Green Monster Oatmeal

1 large handful fresh spinach
large ripe banana
1/8tsp vanilla extract
1 cup almond milk
1/3 cup regular, rolled oats

1. In a blender, blend together the spinach, banana, and half cup of almond milk until smooth.

2. In a saucepan, mix the oats, vanilla extract and the other half of almond milk and bring to a boil.
3. Lower the heat and mix in the spinach-banana mixture. Stir until you reach the desired consistency.
4. Transfer to a bowl and serve hot! (or you may also make it into an overnight oatmeal, just store in the ref and eat whenever you like). You may also add any topping you like! I didn't add any so I could savor the plain goodness of the banana-spinach mixture ;)

Oatmeal 30 Project - Week 1


And, my first week is up and its time to recap the first 7 ways I did with my oatmeal! ;) I'm basically new with making a recipe blog so I hope you could tolerate my posts. Hehe :')

Anyways, based from the research that I did, most recipes are either original or adapted from other food bloggers and if the latter, they put links to the original ones. Since I wanna try different ways for my oatmeal, I searched over what other food bloggers or oatmeal lovers do with theirs and I found a lot of wonderful sites so you could find blog links as you go through other recipes.



So, let's not prolong the wait anymore, hehe. Below are the list of my week 1 oatmeal ideas! Click on the link to see the recipe:

Day 01 - PB and Apple Oatmeal
Day 02 - Blueberry Nut Oatmeal
Day 03 - Almond Banana Oatmeal
Day 04 - Apple, Raisin, and Cinnamon Oatmeal
Day 05 - Peanut Butter Cup Oatmeal
Day 06 - Mango Cranberry Almond Oatmeal
Day 07 -  Dark Chocolate Cherry Oatmeal

This week's recipes had been an average one since most of these doesn't sound or tasted radical or anything so, maybe as the weeks go by and as my taste buds look for a new topping, the recipes will become more and more out-of-the-way. :P Another week is coming and I have more recipes to try. I can't wait!

{O30} Day 10: Lemon Blueberry Oatmeal

1/2  cup oats
1 cup almond milk
1 tbsp. fresh lemon zest (about 1 lemon)
1/3 cup fresh blueberries
1/2  tbsp maple syrup
1 cup Greek yogurt (I used Fage 0%)
1/4 teaspoon nutmeg



1. Bring milk to a boil in a medium-sized pot.
2. Add oats and lemon zest, and cover. Bring back to boil and reduce heat to simmer.
3. In a medium bowl whisk remaining lemon juice, maple syrup, yogurt, and nutmeg. Pour this on top of the oats.
4. Stir in fresh blueberries. Serve hot and Enjoy!

{O30} Day 9: Kiwi Cranberry Oatmeal

 

½ cup oats
1 cup almond milk
1 kiwi, peeled and cubed
1/3 cup cranberries
a few sprinkles of cinnamon
1/8tsp vanilla extract
1 sachet stevia

1. In a saucepan, mix oats, and milk and bring to a boil. Approx 5 minutes.

2. Turn heat down and add half of the kiwi, cinnamon, vanilla extract, and stevia. Stir well until desired consistency is acheived.

3. Transfer into bowl and top with the remaining kiwi, and dried cranberries. Serve hot! ;)

{O30} Day 8: Dark Chocolate Cottage Cheese Oatmeal

1/2 cup rolled oats
 1 cup almond milk (I used Silk Almond Milk)
1/4 cup low sodium cottage cheese
1 Tablespoon cocoa powder (Ghirardelli Unsweetedned Dark Chocolate Powder)
1 Tablespoon Better N' Peanut Butter

1. In a small pot, heat the oats, almond milk, and water until they come to a boil.
2. Lower heat and allow to simmer.  Add cottage cheese and stir well.
3. When oats have reach desired consistency, remove from heat and stir in cocoa powder.
4. Put oats into a bowl and immediately with peanut butter.

{O30} Day 7: Chocolate Cherry Oatmeal


 

½ cup oatmeal
1 cup soy milk
1 handful cashews
6-8 frozen/fresh cherries, halved and pitted
a few sprinkles of cinnamon
1 tsp maple syrup
1/2 vanilla extract
1 tbsp cocoa powder

  1. Bring 1 cup liquid (I use Silk Almond Milk) to a boil, add 1/2 cup regular rolled oats, and reduce heat to medium.
  2. Mix in fresh cherries and continue to stir.
  3. Once more of the liquid has dissolved, add 1/2 tsp vanilla extract, cinnamon, cocoa powder and maple syrup.
  4. When you're pleased with the consistency of the oatmeal, transfer to a bowl. Top with cashews, and another cherry if you like. Serve hot!

{O30} Day 6: Mango Cranberry Almond Oatmeal

 

1/2 cup instant oats
1 frozen mango, chopped
2 tablespoons dried cranberries
1 teaspoon maple syrup
1/2 teaspoon cinnamon
1/2 cup skim or almond milk

Mix all ingredients in a jar and refrigerate for 2 hours or more (even overnight). Serve and enjoy cold! ;)
